Chocolate Mousse Ingredients: 1 envelope unflavored gelatin 2 tablespoons cold water 1/4 cup boiling water 3/4 cups sugar 1/2 cup cocoa 2 cups chilled whipping cream 2 teaspoons vanilla extract Directions: In a small bowl, sprinkle gelatin over cold water. Let stand 1 minute to soften. Add the boiling water. Stir until gelatin is completely dissolved and mixture is clear. Cool slightly. In a large cold mixing bowl, stir together sugar and cocoa. Add the whipping cream and vanilla. Beat on medium speed until stiff. Pour in the gelatin mixture and beat in until well blended. Refrigerate about 1/2 hour. Makes about 4 cups.
